Avocado, Pine Nut and Pancetta Spinach Salad

Product: Blue Kettle Poppy Seed Dressing

- 10 - 12 slices pancetta
- ½ cup pine nuts
- 4 servings spinach
- 2 ripe avocados, stoned, peeled and sliced

- Blue Kettle Poppy Seed Dressing

- Fry pancetta slices until crispy. Remove and place on paper towel
- Lightly toast pine nuts in same frying pan for approximately 3 to 4 minutes, stirring constantly
- Evenly distribute spinach onto plates and place avocado slices over top
- Sprinkle with toasted pine nuts and sliced pancetta
- Drizzle Blue Kettle Poppy Seed Dressing on top
